Oktoberfest sausage salad

After Munich, it’s Limburg’s turn to celebrate Oktoberfest. This sausage salad will give you a taste of the upcoming festivities and is the perfect dish for a barbecue or a party.

(Recipe serves 4)


150 g pickles in vinegar

1 red onion

2 tbsp. red or white wine vinegar

100 ml vegetable stock

1 tsp. sharp mustard

1 tsp. sugar

salt and pepper

8 tsp. vegetable oil

Limburg schinkenworst (ham sausage)


Thinly slice the pickles. Peel, halve, and thinly slice the onion. Whisk the pickle brine, vinegar, vegetable stock, mustard, and sugar in a small bowl. Season to taste with salt and pepper. Stir in the pickles and onions. Add the oil, stir well and season to taste with salt and pepper.

Thinly slice the sausage or cut into strips. Marinate the sausage for at least one hour. Garnish with chives and serve.

Goes well with thick-cut Limburg rye bread.
