KING’S SOUP WITH AN ASIAN TWIST

KING’S SOUP WITH AN ASIAN TWIST

A healthy King’s Day treat and a delightful and delicious combination year-round. (Recipe for 4 cups of soup)

INGREDIENTS

· 500 g carrots, chopped

· 1 onion, finely chopped

· 1 tsp. ginger root, grated

· 1½ l vegetable stock

· 200 ml coconut milk

· 1 tbsp. lime juice

· 1 tbsp. olive oil

· 1 tsp. curry powder

· 1 tsp. cumin powder

· 4 tbsp. coriander, finely chopped

· salt and pepper

METHOD:

Add olive oil to a large pot and cook the onion. After two minutes, stir in the ginger, cumin, and curry. Pour in the vegetable stock and bring to a boil. Add the carrots and cook until tender. Puree the mixture with a stick blender and season to taste with salt and pepper. Stir in the coconut milk.

Put the soup in the refrigerator and allow to cool. Just before serving, add the lime juice and garnish with the coriander.
